What You Need:
Rind of 1/2 of a large watermelon
4 large boxes red jell-o (6 oz., we used cherry)
5 cups water
1/4 c. mini chocolate chips (we eyeballed it, and I think we used less)
**DO NOT FOLLOW DIRECTIONS ON THE JELL-O BOXES - YOUR "WATERMELON" WILL COME OUT TOO SOFT!!**
Scoop out fruit with a melon making sure to get all the way down to the green rind. You may have to shave a little off the bottom of the outside of the rind to make it stand up straight - just be sure not to cut all the way through! Boil the water, add the Jell-O and stir well. Then pour the mixture into your rind. Place your "watermelon" in the refrigerator. When mixture is firm but not completely set, push mini-chocolate chips into the Jell-O using a chopstick or skewer. Let set completely in the fridge.
